As you know, I am always looking for healthier low glycemic recipes to add into the mix at Thanksgiving. Here are a few to try! I really appreciate all my friends and clients and wish for you a joyous holiday season!
Healthy Thanksgiving Recipes:
Roasted Citrus Cilantro Sweet Potatoes Adapted from Gourmet Magazine May 2004
2 lbs sweet potatoes
2 tbs butter or ghee
Juice and zest of one Orange
¼ cup chopped cilantro
½ tsp salt
Melt butter and mix with the juice, zest, and salt. Peel and cut potatoes in to 1 inch squares toss with butter mixture. Roast at 375 degrees until tender. Sprinkle with chopped cilantro to garnish.
Lemon Maple Squash adapted from Food Network Magazine
4 pounds butternut or calabaza squash
1/3c water
1/4 cup maple syrup
pinch of cayenne pepper
juice and zest of 1 lemon
½ tsp sage
1 tbs butter
Peel, seed, and cut squash into 2 in cubes. Coat with water, maple syrup, lemon juice and zest. Sprinkle salt, pepper, cayenne, and sage. Dot with butter. Roast in the oven at 350 degrees for 30 min or until tender.
Faux Cheezy Mashed Potatoes serves 8-10
2 large heads of cauliflowers
2 tbs butter
Salt & Pepper to taste
3 tbs of goat cheese chevre
Cut steamed cauliflower until soft. Dry in the oven on a cookie sheet for 15 min on 350 degrees. Blend ingredients in food processor until creamy/mashed potato consistency. Add chopped chives or parsley for garnish.
