While traveling in Italy, I found it difficult to stay on track with healthy eating. I was on vacation, but food allergies keep me on my toes. Trying to avoid dairy and gluten in Italy can almost feel like fasting. But it is the worst thing traveling with a stomach upset (luckily I had my enzyme supplement)! Even with some vitamin help, I was set to search beyond the tourist menu of Lasagna and Pizza. In Venice, I found it! It was hidden on the menu in Italian, but luckily someone else ordered a plates of mixed grilled veggies. I noticed it going by, and told my waiter I’ll have what she’s having. Once I learned the name “verdura contorno”, I fell in love with this healthy italian option.
At home one of my favorite ways to have summer veggies is on the grill, marinated in a dash of Sass dressing (a ginger garlic tahini goodness). Then add a bit of balsamic and olive oil drizzled on! Mmmm! I must admit they had little variety beyond zucchini, yellow squash, eggplant and peppers in Italy. But there are always more possibilities:mushrooms, tomatoes, peaches, and my favorite sweet potato (with the skin on). Just add a little oil and spice. It just doesn’t get better!
